Holiday Baking

I thought I would start this blog with one of our tradiltional family recipes. Coming from a Scottish background I have tasted every version of holiday shortbread cookies imaginable. My favourite is the Whipped Shortbread because it has a melt in your mouth taste while maintaining a light and flaky texture. The candied cherries give it the fruity sweetness and colour that says Happy Holidays!

Whipped Shortbread
1 lb. butter
1 c. powdered icing sugar
1 tsp. vanilla extract
1 pinch salt
1/2 c. cornstarch
3 c. all-purpose flour

Preheat oven to 350 F. Cream together butter, icing sugar, vanilla and salt.
Gradually add cornstarch and flour. Whip with in electric mixer until fluffy.
Scoop 1 tablespoon at a time onto a baking sheet lined with parchment paper.
Decorate with candies cherries if desired.
Bake 12-15 minutes.
Let cool for 2 minutes on baking sheet and then on wire rack until cooled completely.
Store in air tight container at room temperature.
